Research shows that diets containing at least five servings of fruits and vegetables a day may help prevent 35% or more of all causes of cancer. It can also reduce the risks of obesity, heart disease, and hypertension. Vegetables supply a big “bang” for your calorie buck. They are nutrient and fiber dense, and typically contain few calories as compared to other foods. Consuming 3–5 servings per day of vegetables (about 1/2 cup per serving) will be the first step in putting you at the head of the class! Try tasty, colorful vegetables in a variety of ways...on sandwiches, in mixed dishes, stir fried, roasted, grilled, in soups, or fresh and crisp.

The phrase a la florentine, meaning “with spinach,” honors spinach-lover Catherine de Medicis and her hometown of Florence. Persians, the original cultivators of spinach, grew it for the diets of their long-haired cats.
