EASY ROASTED RED PEPPER HUMMUS
This easy recipe is low in fat and a good source of fiber, protein, and carbohydrate. It makes a great snack for students on the go!
Red Pepper Hummus 2 Entree Portions

2 Cloves Garlic, Minced
1 (15 Oz) Can Garbanzo Beans
1/3 Cup Tahini
1/3 Cup Lemon Juice (Fresh Juice is Preferred)

Process until very smooth in an electric food processor.

1/2 Cup Roasted Red Peppers (or more if desired)
1/4 Teaspoon Dried Basil

Add roasted peppers and basil. Process until the peppers are finely chopped.

1/8 Teaspoon Salt
1/16 Teaspoon Ground Black Pepper

Season with salt and pepper. Transfer hummus to small bowl; cover and chill until ready to serve.
