Fresh and full of flavor, not to mention nutritious! Our national award-winning Department of Dining Services is proud to offer a wide variety of made-from-scratch menu items that will make you feel like you never left home.  In addition to an ever-changing menu of the classics, each dining center offers a variety of specialty foods including vegetarian and ethnic cuisines.

Classics

The Classics menu serves up a variety of homemade entrees and side dishes. Each day, the Classics menu features a minimum of two meat entrées, a vegetarian entrée, a selection of side dishes, and made-from-scratch breads and rolls (dinner only). The menu items on the classics line range from tried-and-true student favorites like Hot Ham and Cheddar Sandwiches to a reflection of the hottest cuisine trends such as Greek-Style Salad Plate with Red Pepper Hummus. If you enjoy these homemade favorites, you will appreciate that our menu never entirely repeats itself.

Dashers

"Dashers at Derby is the fast, convenient way for you to get a nutritious meal on the go! For breakfast, lunch,
or dinner…choose from any Classic or Specialty menu entrée and side dishes. Then swing by the dining room for your choice of yogurt, soup-of-the-day, salads, desserts, and condiments available self-serve. Additionally, you
may select from a wide variety of beverages including sodas, milk, juice, coffee, and tea. Portable, disposable containers and service ware are provided for your carryout convenience.  Dashers at Derby is available during all meals."



Grilled Hot! and Delicatessen

Enjoy selecting from freshly-prepared deli sandwiches and grilled items for lunch or dinner. Each day, this line features deli ham, deli turkey, and a specialty deli meat as well as American, Swiss, and a specialty cheese served on a freshly-baked, homemade sub bun. If the grill is what your taste buds are craving, then choose from hamburgers, cheeseburgers, garden burgers (upon request), hot dogs, grilled cheese sandwiches, and French fries available daily. No grill or deli entrée is complete without its condiments. Choose from shredded or leaf lettuce, sliced tomatoes and onions, ketchup, mustard, pickle relish, sauerkraut, and specialty spreads.



Borders

If you crave a taste from the Southwest, then make Borders at the Derb your stop! At lunch, Borders offer a choice of crisp or soft taco shells, Tostitos® tortilla chips, seasoned taco meat, refried beans, and seasoned rice. Mix and match these to make an array of southwest entrees, and then top it off with your choice of cheddar cheese, shredded lettuce, tomatoes, black olives, picante sauce, and sour cream.


Poco-Italia

Your mouth will water with the aroma from the homemade selections at Poco Italia. At lunch Poco Italia features three-cheese pan pizza and a specialty pizza, daily. Both pizzas start with a made-from-scratch crust, hand topped with a variety of fresh ingredients, and finished with a three-cheese blend. For dinner, select from three-cheese or specialty pizza as well as pasta with sauce. Top your dinner off with a side of hot, freshly-baked bread sticks!


Change-Ups

Change Ups! at Derby is the perfect way to end your Thursday. Change Ups! is designed to provide a change from the ordinary or the familiar. Depending on the theme, it may introduce students to flavors from around the world such as Vietnamese, Moroccan, and Caribbean, or you might wind down with biscotti and flavored coffee from Giovanni’s Café. Whatever the theme, be assured it will be a real treat! Change Ups! are located in the marketplace every Thursday evening.


Chef's Table

Fresh ingredients, customized to your liking and freshly prepared as you wait, is what you’ll find Monday through Wednesday on the Chef’s Table. The Derb’ staff will entertain you by cookin’ up a variety of regional and international favorites to satisfy your cravings. The cuisine changes nightly, featuring everything from St. Louis-Style BBQ Ribs to warm flatbreads topped with veggies and sautéed meats. Expect a featured bakery item each night, made from scratch and baked fresh in the Derby bakery. Dining at the Chef’s Table offers you an unique opportunity to interact one-on-one with the Derb staff as they showcase their skills and share their expertise. So, enhance your culinary knowledge, kick back, relax, and enjoy your dining experience at the Chef’s Table.


Willie-Wok

The spot to be at lunch is Willie Wok, Derby’s made-to-order stir fry station. Customize your meal by selecting from a variety of fresh meats and vegetables-then watch it prepared before your eyes. While waiting, choose from a variety of sauces, rice, and noodles to complete your made-to-order meal.
