If you’re looking for Mark, you’re likely to find him in several different Derby locations. As unit director of Derby Dining Center, he may be upstairs conversing with customers and staff, or tending to general administrative duties in his office downstairs. Mark, a HRIMD faculty member and special-events committee chair, is always busy instructing HRIMD students, or planning for the next Dining Services special-dinner event. He has attended numerous culinary-training workshops, and his culinary skills and knowledge have helped our staff win numerous NACUFS Culinary Challenge awards. Holly wears many hats at Derby! Whether it be athletic training-table manager, catering coordinator, or special-events committee member, Holly is always on the go. You will typically find Holly on A line checking food quality, or planning the next big catering event. Holly showcases her natural creativity and talent for decorating and cuisine each week at Derby during “Change Ups!”. Holly welcomes you to visit with her at Derby or by phone or e-mail about suggestions for “Change ups!”, monotony breakers, or about how we can improve your Derby dining experience.

If you’re looking for Tyrone, you will likely find him in Derby’s production kitchen. As the early-shift manager, Tyrone’s dedicated to satisfying our dinner customers. Not only does Tyrone oversee early-shift food production, he also mentors and trains student employees in the service and production areas. Although Tyrone is always on the move, he really enjoys visiting with customers. If you have specific questions about menu items, ingredients, or general Derby questions, feel free to talk to Tyrone.

Becky’s top priority is making sure the Derby Sanitation Department runs smoothly. For you, this means clean dishes! Becky’s experience in the sanitation department the last ten years has been invaluable for troubleshooting potential problems. You will find her all over Derby Dining Center working with her staff to keep Derby shiny clean, and supplied with plenty of clean service ware and pots and pans. Michelle wears numerous hats for Dining Services, the primary being the project leader for implementation of Computrition Recipe Managment System into Dining Services Operations. As a registered dietitian, her talents and knowledge are utilized frequntly on the nutrition-education committee and as a ServSafe instructor. Her food-safety instruction has help our staff increase their knowledge and understanding of food-safety issues. Michelle is an active member of the American Dietetic Association, Dietetic Association of Kansas State University, Kaw Valley Dietetic Association, National Association of College and University Foodservice, and the Manhattan Young Life Board.
